The original intention was to have the Stargazer as a Constitution class vessel, thereby reusing the Enterprise model from the movies.
The scene where Geordie announced the approaching starship was dubbed, but if you look closely, you can see that his lips say "Constitution" while his voice says "Constellation"...
They are noticeable by their absence in the armada scenes in the DS9 Dominion war episodes, but I imagine that by this time, the class was ageing and had mostly been replaced by more modern vessels.
