  Convection Oven
Operating on standard household current, the convection oven uses electricity to heat the air in the oven.
Since this heat-circulating fan is not inside the oven cavity, the oven can be filled from top to bottom as long as an inch of space is left for the air to circulate between the food and the oven walls.
Convection ovens provide more uniform heat than regular ovens by moving the oven air away from both the heat source and the top of the oven cavity.

Convection oven - Wikipedia, the free encyclopedia
Convection ovens use heated air that is forced into the oven by fans located in the back of the oven, generally for cooking food.
By moving heated air past the food, convection ovens operate at a lower temperature than a standard conventional oven and they can cook food more quickly.
With a convection oven there will be about a 25 to 30% decrease in cooking temperature and a 20% decrease in cooking time as compared to a conventional oven.

All about Convection Ovens - Keidel Bath, Plumbing, Kitchen - Cincinnati, OH
Convection ovens have been popular in Europe and in restaurants for years, but were introduced to the US residential market in 1978 by the Jenn-Air Corporation.
Convection occurs when another medium or fluid is used to convey the heat from the source to the food, as in water boiling in a pot, or hot air moving in an oven, which in turn heats the food.
As food is heated in an oven, an insulation barrier forms on the surface of the food, caused by the heat exchange between the hot air and the cold food and by the evaporation of moisture in the food.

Better Cooking Through Convection - Fine Cooking Article
In many ovens, the third heating element is covered by a baffle, or a panel, which channels air sucked in by the fan past the heating element and back out into the oven.
In most of these ovens, though, the fan is mounted on the inside of the oven cavity, but the air blowing around the food won't be a uniform temperature.
A large countertop convection oven, such as those from Delonghi, produces excellent results, including extra-crispy roast potatoes and juicy, golden roast chicken in 20% to 25% less time than the same food cooked in a radiant oven.

Because the heat in a convection oven is so intense, the sugar in the brining solution began to caramelize before the bird was done, creating unsightly brown splotches on the skin.
Unlike standard ovens, in which heat moves slowly from the heat source to the food, convection ovens use a fan to move hot air around the oven cavity.

Convection Oven   (Site not responding. Last check: 2007-10-14)
A convection oven will be 50 degrees hotter than a standard conventional oven because of the circulating air from the fan in the back.
Once the item is in the oven, set a separate timer to time the items, do not use the timers on the oven because their alarms aren't loud enough to catch attention.
The convection oven has a tendency to brown the back side of items faster due to the fan in the back of the oven, by turning the items midway through, they will brown evenly.

One of the seminars i attended was theconvection cooking class sponsored by sharp electronics which makes a lotof the convection oven for.
The difference between them is that while a standard oven waits for natural convection to move heat slowly from the heat source to the food a convection oven uses a fan to drive heat rapidly from source to food.
Convection ovens without a third heating element generally cook less evenly.

drying ovens - infrared ovens vs heated convection oven vs Rapid Dry   (Site not responding. Last check: 2007-10-14)
n a heated convection oven, nearly all of the heat required to evaporate the water and dry the coating comes from hot, relatively dry air impinging on the surface of the coating.
The drying rate is determined by the properties of the circulating air because the temperature of the coating surface becomes the wet bulb temperature due to the cooling effects of evaporation.
The method of moisture removal from the oven is through dilution by means of the fresh air brought in to replace the exhausted air volume.

Growth of the NDF content was beneficially influenced by thermal processing in a convection oven in the case of sauerkraut and by traditional cooking in water in the case of potatoes.
Generally it should be assumed that cooking potatoes and sauerkraut in convection oven causes smaller losses in vitamin C. In the case of potatoes the losses, as compared to traditional cooking in water, are lower by almost 10% and those in sauerkraut by over 20%.
All in all it should be stated that the use of convection oven for cooking pork dishes secures lowering of losses in thiamine on average by 5% as compared to traditional methods.

physics central dear lou - convection ovens
While natural may sound appealing, a convection oven is simply better than a standard oven.
But the airflow pattern in a standard oven is erratic, unpredictable, and easily upset by the very food that it's trying to cook.
And even when the oven is almost empty, heat is transferred more efficiently to the bottom of the food than to its top so it's easy to burn the bottom.

A first-time convection oven user, like myself, probably wouldn't know how to determine recipe cooking times and temperatures for their particular convection oven, nor do I think they would want to.
This section is entitled "Oven Settings" and says, for example, that when cooking a pie, despite that convection oven manufacturers may instruct the user to use the roast function (method of cooking), do not use it because it may brown the top of the pie too quickly.
Because a convection oven employs circulating heat to cook food, the efficiency of the circular motion of cooking may be affected by the shapes of pans, the material the cookware is made of, etc.

 Convection Oven - Discussion Groups
Use a lower temperature than called for in the conventional oven (e.g., if your recipe calls for 425 - for a sponge cake - you'd use 350 in the convection) and a much shorter time (same sponge cake takes 15 minutes in a regular oven, but 8 mins in a convection).
A small convection oven will only do what your regular oven does, i.e., bake, roast, etc. - it just does it in a different manner than your conventional oven - lower temps, shorter cooking times.
When you select the oven to convection (on the one I had, there were convection/bake buttons), it will circulate the hot air to bake whatever you put it in for whatever amount of time you set it for.
