Coon cheese was introduced to Australia in the early 1930's by Fred Walker from the Kraft Walker Cheese Company.
He liked the sharp flavours that came from the traditional methods of many months of natural ageing, under natural temperatures and frowned upon the blandness of natural cheese that was matured in refrigerated conditions and loss of flavour and texture during pastuerisation.
Edward Coon then set about determining the conditions under which he could achieve the full-bodied flavour of a matured cheese in a shorter time, ensuring quality and the absence of the usual defects.

The harsher reality is that 'coon' was used, especially in the Southern (slave-owning) states of America, to refer to the African Negroes brought as slaves to America.
A coon's age, I believe, is a misnomer for longevity.

I was also unable to buy Monterey Jack cheese so I substituted with shredded Coon cheese with Mexican spices.
I couldn't fit all 10 enchiladas into the pan I was using so I made it into a sort of casserole by pouring all of the left over chicken, red sauce and cottage cheese mix over the top and then sprinkling with the remaining cheese.
I found that the combination of low fat cottage cheese and sour cream caused a bit of extra moisture which made it a bit soupy when served up.

I'd forgotten to put food out, and the coon was scratching the screen, probably wondering how it got there.
They're more likely to come out at night, but healthy coons do come out during the day sometimes, especially when they have young children.

Being Dutch of course my favourate cheese is a dutch smoked, and I rarly have it becuase its not the cheapest cheese and wouldnt you know it when I got home from Geocaching my wife had done the shopping and guess what she had bought for me,
I quite like it in a toasted sandwich with a layer of cheese then some ham then some HP sauce (Must be HP nothing else) then another layer of cheese and toasted to perfection.
My favourite cheese is Mozorella which usually means I'm eating a pizza but I am getting a bit of a taste for a Fetta in a salad lately.

Whilst touring Australia in March I made a point of actually trying Coon cheese.

I cut the recipe in half and cooked it in an 8 or 9 inch square pan and it worked perfectly.
