Crema ((A native or inhabitant of Italy) Italian, " (The part of milk containing the butterfat) cream") is a key component in the flavor of (Strong fl coffee brewed by forcing hot water under pressure through finely ground coffee beans) espresso with the appearance of a golden foam on the surface of the coffee.
The crema has elements of both (A light-sensitive coating on paper or film; consists of fine grains of silver bromide suspended in a gelatin) emulsion and (A mixture with properties between those of a solution and fine suspension) colloid.
