The result is imbibed in small cups of very strong coffee with a foam on the top and thick layer of sludgy grounds at the bottom of the cup, often referred to as the "mud".
It is one of the strongest tasting forms of coffee regularly consumed, with a distinctive flavor and crema, the emulsified oils in the form of a colloidal foam standing over the liquid.
The crema or "face" is considered crucial, and since it requires some skill to achieve its presence is taken as evidence of a well-made brew.
