Croque Monsieur ("Crunch Mister") and Croque Madame ("Crunch Missis") are very traditional snacks in France.
Concerning the meaning of the name, the verb "croquer" means to crunch.
It is difficult to say why "monsieur" or "madame", for monsieur, probably because workers were asking for a fast and hot dish in bars and cafés.

The Monte Cristo, the American cousin to the Croque Monsieur and Madame, is made with pretty much the same ingredients, then dipped into an egg batter (a la French toast) and pan fried.
Before the croque became a "fast-food" classic, it was served as an hors d'oeuvre or tea sandwich.
The name comes from the verb "croquer" which means "to crunch." No one exactly knows how or why "monsieur" or "madame" came into use, but it is speculated to have arisen because the quickly eaten sandwich was a worker (male and female) favorite.

Actually, the French have their own version of a grilled cheese sandwich called the croque monsieur, a ham and cheese sandwich that is dipped in an egg wash like regular French toast (but not always), grilled, and served with creamy Mornay or Béchamel sauce.
The croque madame is the monsieur’s companion, but since she is a lady, she has a fried egg on top.
Croque Monsieur is my favorite type of "grilled cheese." Angelique Cafe in downtown L.A. has a good version of it with bechamel sauce.

Silverton includes the classic Croque Madame and Croque Monsieur, possibly the first breakfast sandwich, which marries Gruyere cheese and smoked ham with eggs, in the case of Madame, and a Mornay sauce for Monsieur.

Every single brasserie, and there is virtually one on every corner, has on its menu: onion soup (without the prefix, "French"), croque monsieur (toasted ham and cheese sandwich), croque madame (toasted ham and cheese sandwich with egg), omelettes, and escargo.
There are bistro/delis in Montreal which serve Croque Monsieur et Croque Madame.
I rather like them; I prefer Croque over American-style pizza, which is often too tart and overcooked.

One holds that it must have a béchamel sauce; the other is that sauce or no, plain Swiss cheese will not do, it must be Swiss Gruyere.
