 The Road from Cuautla
The entrance to Cuautla is marked by a brand new statue, arch, and row of palm trees, but many of the city streets remain covered with rough, uneven cobblestones.
Though the restaurant owners had no financial part in the new highway to Cuautla, of which roughly 300 to 350 kilometers have been constructed, their influence can't be discounted, as local politicians are well aware of the money and power in Cuautla.
The governor of Jalisco, Francisco Ramirez Acuna, is a regular visitor to Cuautla and attended a large dinner party during the Santo Santiago fiesta.

The 3,000 Cuautla residents living in the United States, most of them in Seattle, are on the cutting edge of a new phenomenon in which U.S. immigrants are creating direct economic links to their homelands that go beyond sending a few hundred dollars home every month.
And as they saw Cuautla becoming a ghost town, the men turned to their most ambitious plan: connecting Jalisco's economic culture of tequila, mariachis, ranching, and the flourishing computer-manufacturing industry to the promising U.S. Northwest.

When the conquerors came to the states of Jalisco, Colima, Nayarit and Aguascalientes, the ticuila o tiquilinos (natives) made alcohol with agave, and they drank it at religious ceremonies and parties.
The manufacturing process is very similar to the one used for other mezcales; the plant’s core is cooked, fermented and the liquid is then distilled using more or less the same technique described in the making of mezcal.
This variety of agave is originally from the Sierra Madre Occidental in Jalisco, from the Ameca River to the Cuale River.
