The hot deep fried vadas are first put in water and then transferred to thick beaten yogurt.

The Vada (or vadai) are a similar mixture to the packet dessert.
As a starter the Dahi Vada have 2 sauces, a sour yoghurt dressing which contrasts with the sweet date sauce.
The best way I found to serve this dish is to pour some of the yoghurt sauce over the Vada and then chill this.

There are many methods of preparing this Dahi Vada, but this one turns out really good.
Fry jeera and the red chillies without oil and grind it to powder, add this to the beaten curd with very little water.
Now fry the vadas in oil, and as soon as you take it out put the vadas in warm water for 5-10 second, after that take the vadas out and squeeze any excess water with hand and put it in the curd.

Actually Vada Pav is very popular in cities like Bombay.
It is not the same Vada as the south Indian one; this one has a potato stuffing, like a samosa, but the coating is thin like a normal vada.

First, they put a big bhalla in a dona, and then sprinkle it with a liberal dose of a secret, flish masala, which I could make out, has roasted jeera, fl pepper, kala namak and several other ingredients that only the Natraj owners know about.
Then the vada is smothered with fresh, whipped dahi.
On top they add a dash of an excellent sweet chutney.
