A dairy is a facility for the extraction and processing of animal milk (mostly from cows, sometimes from buffalo, sheep or goats) and other farm animals, for human consumption.
In the southern hemisphere the cooperative dairying systems allow for two months on no productivity because their systems are designed to take advantage of maximum milk production in the spring and because the milk processing plants pay bonuses in the dry season to carry the farmers through the mid-winter.
Later, cream was separated from the milk by machine, on the farm, and the cream was transported to a factory for buttermaking.

Dairy farming is a class of agricultural, or more properly, an animal husbandry enterprise, raising female cattle for long-term production of milk, which may be either processed on-site or transported to a dairy for processing and eventual retail sale.
In large countries, dairy farming tends to be geographically clustered in regions with abundant natural water supplies (milk is mostly water) and relatively inexpensive land (even under the most generous subsidy regimes, dairy farms have poor return on capital).
Centralized dairy farming as we understand it primarily developed around villages and cities, where residents were unable to have cows of their own due to a lack of grazing lands.
