Damson - Wikipedia, the free encyclopedia
The Damson is an edible drupaceous fruit, a cultivated variety of the plum tree, Prunus domestica var.
The damson is identified by its small, oval shape (though slightly pointed at one end), smooth-textured yellow-green flesh, and skin from dark blue to indigo.
Because of this acidic, tart flavour, damsons are commercially grown for preparation in jellies and jams.

 winemaking: wild damson wine
The common damson (Prunus institia) is a bluish-fl juicy native plum of Europe and Asia.
Wild damsons make an excellent wine, but, like cherry wines, it must be aged for some time to "come into its own." When fermentation ends, wild damson wine is almost undrinkable and the winemaker will be tempted to either over-sweeten it to overcome its astringency or toss it out altogether.
Damson wine is best when finished slightly sweet, but it does okay as a sweet or dessert wine and is very good with glazed or stuffed fowl, especially wild fowl.
