Joran Dax (born Joran Belar) was a noted musician on the planet Trill, and was chosen to host the Dax symbiont after the death of the previous host, Torias.
Later, Jadzia Dax experienced hidden memories of Joran, which were so traumatic that they threatened to kill her, requiring Trill doctors to uncover the memories of Dax's joining with Joran (and, consequently, to unseal the government's records of the joining) to save Jadzia's life.
Yedrin Dax (played by Gary Frank) was a host of the Dax symbiont in an alternate timeline created when the USS Defiant travelled back through time two hundred years and crash landed on the planet Gaia, in the episode Children of Time.

In fact, she is surprised when she becomes aware that there is a symbiont in Odan's body or, to be more precise, the symbiont is Odan (according to the TNG Trill physiology).
Emony Dax was on Earth around 2245 where she acted as a judge in a gymnastics competition which almost definitely requires that humans had at least some basic knowledge about Trills already then.

She is overwhelmed by Dax and the past hosts but at the same time, her will is so strong that she overwhelms it much of the time too.
She suggested that they send Dax away in case she ever did want to come back for a guest thing, but the writers told her that killing Dax off was more effective.
Dax and Worf are going on a secret mission behind Cardie lines to get someone who wants to defect (not to mention that that guy has info on all the Founders in the Alpha Quadrent.) Worf and Dax go, and are ambushed by some Jem'Hadar.
