He was a cousin of Ennemond Gaultier, with whom he was closely connected (Denis was called "Gaultier le jeune" to separate him from Ennemond, but nonetheless publications often misattributed works between them or printed only their last name); perhaps also a student of Charles Racquet, whose death he commemorated with a tombeau.
He held no court position, but gained fame through salon playing; his works consist mainly of dance suites for the lute.

To distinguish him from his cousin Denis Gaultier, he was often referred to as le vieux Gaultier; he was also known as Gaultier de Lyon (Lyons is the nearest important city to his birthplace).
He retired to Dauphiné in 1631: presumably this is why none of his works, which were widely admired, were published during his lifetime.
Lack of publication is one of the factors that have made it so difficult to separate Ennemond Gaultier´s music (all originally for lute) from that of his cousin Denis, with whom he was so closely identified: the question is discussed more fully in the article on Denis Gaultier, as in the nature of their music.

According to the researcher Madame Pierre Montagne, it appears Zacharie was born to Denis Cloutier and Renée Briere prior to the keeping of records at the St. Jean Baptiste parish church.

Ennemond Gauthier [1575-1651] was known as 'Gaultier de Lyon' as he was born near Lyon, 'Gautier de Vienne' or as 'le vieux Gautier' to distinguish him from his cousin Denis Gauthier [1603-1672] who was called 'Gaultier le jeune' or 'Gaultier de Paris'.
Unfortunately, they are all ascribed simply to Gaultier [or other spelling] without reference to which one [except #21, which is ascribed 'Old Cautier' in Sibley, indicating Ennemond, and #44 uses the same title as another piece by Denis Gauthier].
The tuning and the dating of the earlier of the sources would suggest that most of these are by Jacques or Ennemond, but the similarity in the style of the pieces doesn't help to decide between these two.
