Disarming in general takes quite a bit of finesse, which you just don't see in sword-and-shield type play.
Disarming would be a bit harder in SCA combat since you are not supposed to hit your opponent's hands or wrists.
Also, most non-wounding disarms are about parrying, then seizing (or "commanding") the offending weapon with your off-hand, not whirling it around with your main weapon.
