Although in ESX3 it is supported to save all your iso's on vmfs partition on the SAN, I still like to have a ext3 partition around where I can store an import or export vmdk.
Concerning the other partitions and the 2Gb / 4Gb size, that is a remainder from working with smaller disks where I realy had to think about every megabyte.
