Dolby S is much more resistant to playback problems caused by noise from the tape transport mechanism than Dolby C. Dolby developed another system in 1982 called Dolby HX, which works by modifying the ultrasonic bias signal, used by all analogue tape decks, to increase the headroom for high-frequency audio signals.
Dolby's analogue noise reduction systems, though still used in some professional applications, have been made obsolete by the widespread adoption of digital audio (in the form of compact discs, MP3s, MiniDiscs, and to a lesser extent DAT) in the home for entertainment and recording.
Dolby B (and C which is similar) is a form of dynamic preemphasis.

Dolby B/C boost the high end of your signal before they put the signal onto the tape, & cut it as it comes off, so that the net result is that noise added to the already increased high end is cut.
Dolby B is pretty insensitive to tape-deck parameters, so you can use it between decks.
Dolby C is MUCH more sensitive to tape deck parameters such as head alignment, bias adjustment, signal pickup, etc, etc, so that you can definetly tell when a dolby C tape is played on a tape deck that it wasn't recorded on.

Dolby B works mostly with higher frequencies; it increases their levels during recording and decreases their levels, and the levels of high-frequency noise such as tape hiss, during playback.
Dolby C achieves greater noise reduction (about 8-10 db) than Dolby B by working with a greater range of frequencies and altering relative levels more; this means that playing Dolby C tapes back with no Dolby processing or with Dolby B, leads to very bad frequency response and a sound that most people find unpleasent.
Dolby C may also be more sensitive to variations among decks in exact frequency response, alignment, etc. Some people find that tapes recorded using Dolby C sound best only when played back on the deck on which they were recorded.

Dolby NR is used to reduce the amount of hiss on tapes that you record or play back.
During playback, Dolby NR reduces the decibel level of the same tones in the high end by 5 to 10 decibels, both the musical high end and the hiss.
Dolby C is able to cut hiss by 10-20 decibels, but there is a catch: You have to use better quality tape (dropouts sound WORSE using Dolby C, compared to Dolby B), and Dolby C tapes are not as compatible as Dolby B tapes when they are played in non-Dolby tape decks.

Dolby describes Type B as using a filter with both sliding gain and sliding frequency breakpoint.
Dolby B was level sensitive (unlike dBx, which was not, but that's another story).

I have a lot of 4-track tapes that were recorded on a Fostex X-13 with Dolby B noise reduction ON.
Playing back Dolby B encoded tapes without Dolby on means you essentially get a high-frequency boost (and consequently more hiss - which you can remove with a denoiser) -- but given that the frequency response of cassette multitrackers is impaired anyways, the added boost may be somewhat beneficial....
With DBX or Dolby C, however - it's not that simple -- DBX encoding involves signal compression and Dolby has multi-stage frequency adjustment and is particularly sensitive to Dolby mistracking, so recovering those types of tracks really does require the same types of machines for proper playback.
