Doogh (in, dooqh, also dugh), also called dugh, abdug, or tahn (the last two mostly by Armenians) is a naturally-carbonated yogurt beverage popular in Iran, Afghanistan, Azerbaijan, Armenia and to a lesser extent in other parts of the Middle East and Caucasus.
Doogh is prepared by beating unflavored yogurt until smooth, and then diluting with water to a consistency similar to whole milk.
Traditionally, doogh is left unrefrigerated for 2-3 days in order to allow the yogurt cultures to ripen and carbonate the beverage.

Things looked to be in good enough shape structurally--i never felt as though the roof was about to cave in while visiting any homes--but with Iranian notions of time (and soemtimes, work ethic) I'm afraid the five-year plan will become a seven or eight year one.
Sangak, a tasty sort of flat bread cooked on hot pebbles that has an appealingly chewy crust, is something I adore already, but when wrapped around a fresh hunk of beef (likely from one of the odd, goatlike mountain cows everpresent in the region) the taste was overwhelmingly good.
Well I normally don't do doogh, as something about the notion of a salty yogurt drink seasoned with herbs has never rang the 'refreshing' bell in my head but this time it was really good.

Commercial dooqh -- there are other spellings I think -- is sometimes carbonated with carbonated water -- that may be harsher and less pleasant.
doogh should be very smooth -- if it looks like vomit, it needs more blending.
My experiences with commercial bottled Iranian doogh, however, are consistent with Mike's, and an order of magnitude beyond any of these.

i remember last time i went to iran we went to a resturant and they had great doogh, we asked whats in it different, and they said, they add garlic powder and fresh lime juice to it.
to be honest, i wasnt and am not the biggest fan of doogh but sometimes you just need some.
I love doogh too, but i would add some fresh lime juice to it.
