NEAR GLOUCESTER, England (CNN) -- The Cooper's Hill cheese rolling contest is an age-old event, where specially-made Double Gloucester cheeses -- weighing seven pounds and measuring a foot in diameter -- are hurled from the hilltop, to be chased and retrieved by runners waiting below.
Runners are supposed to chase the cheeses to the bottom of the very steep hill, with the first one over the finish line allowed to keep the cheese as a prize.
The origins of the cheese race are unclear, but it's believed to have started several hundred years ago, possibly as a pagan festival to celebrate summer.

In taste, Single Gloucester is light and creamy with a subtle flavour, wheras Double Gloucester is rich and tangy with a firm, dense, smooth texture.
In the 1970s, to save Gloucester cattle from extinction (there were only 45 animals left in 1974), Charles Martell started making this cheese in the traditional way at his farm near Dymock.
Now the number of Gloucester cattle has risen to seven hundred and both Single and Double Gloucesters are made by a handful of craft makers, including Martell.

A type of English cheese that at one time was made only with the milk from Gloucester cows, which are now almost extinct.
The main difference is that Single Gloucester is made with skim milk combined with a small amount of whole milk and Double Gloucester is made from whole milk.
Double Gloucester has a stronger and savorier flavor than Single and is a bit firmer.
