The purpose of the double declutch is to match the speed of the rotating parts of the gearbox for the gear you wish to select to the speed of the input shaft being driven by the engine.
To perform a double declutch, the clutch pedal is pressed and the gearbox shifted into neutral.
A related technique is called Heel-and-Toe, in which the double declutch is performed while braking (braking and changing to a lower gear on entry to a bend for example).

TCS Racing - Racing Tips - Double Declutching
Double declutching (sometimes spelt double de-clutching) is a technique that, if done properly, allows you to down shift smoothly using a manual transmission.
Double declutching will also reduce wear and tear on your synchros even if you have good ones, increasing the life of your transmission.
Note however that double declutching is a lot easier to learn than the heal and toe technique and if you plan to do both together you may be better off learning this first, then moving on to the other.

 NASIOC - Double clutching?
Which means that unless you master the art of precise rev matching (double clutching), you not only are not going to get the gears engaged, but you are also risking damaging the gearbox by grinding the gears.
I habitually double declutch at all times in any weather and although I would be first to admit that this is not always called for, this habit of mine is probably the only reason why I have never had a single gearbox breakdown on any of my cars.
With a bit of a practice, you should be able to do the double declutching downshifts in under 2 seconds.

Heel & Toe article by EVO's John Barker
If you bring the clutch up in neutral when you blip on a change down (double declutching) you are more closely matching the speed of the cogs in the gearbox so the synchromesh has less work to do.
While declutching, if instead you ease back the throttle slightly (just enough so that when you dip the clutch, which unloads the engine, the engine speed doesn't speed up for that reason alone), the throttle will remain fairly close to the correct point for the lower gear.
Double de-clutch should not be necessary as part of Heel and Toe in a modern car.

 Re: Rev matching not necessary?
Double declutching involves putting in the clutch, shifting into neutral, releasing the clutch, then hitting the throttle pedal, depressing the clutch a second time, shifting into the lower gear, releasing the clutch pedal.
It is even quicker than the double declutch, though not by much when a practiced driver is doing it.
The "blip" technique is what I use on my car because it has the syncros, so there really is not much point to doing the double declutch on it, and that is what I was trying to describe, perhaps inartfully, in the first post.

Normally I would declutch, move the stick to fourth and re-engage the clutch, which would force the clutch disc and input shaft to speed up from ~2500rpm to let's say 3400rpm instantly.
To double clutch, I would declutch, shift to neutral, engage the clutch, rev ("blip") the motor to 3300rpm, declutch, move to fourth, engage clutch and smoothly let off the throttle to slow down.
As there was NO synchro, you either learned to double clutch, or the transmission took a lot of abuse in a big hurry.

Upshifting is a double-clutch, downshifting is a double declutch with a throttle blip in Neutral?
I've never blipped the throttle when shifting to first (Subaru 360 has unsynced 1st gear) of course this is usually because I come to a stop before engaging it.
I think a well-executed single/double clutch upshift or double clutch downshift will be overall faster than power shifting, sound cooler, and certainly put less pressure on the drivetrain.

This procedure causes the input shaft on the transmission to speed up so that the relative speeds of the gears are closer when you actually engage the lower gear.
It's a much more important procedure when operating a heavy vehicle such as a 3 or 5 ton truck, and also allows shifting of transmissions with straight cut non-synchro gears, like the 1st gear in earlier heavy duty pickups (1981 F-350 for example).
Think the point is to rev and match engine/transmission speed while your shifter is in neutral.

In modern cars it is not necessary to use double declutching unless you really want to be a professional.
The idea is that double declutching matches the engine speed to the speed of the car so that when you change your gear and bring up the clutch the car does so in a smooth manner and not jerky like most times.
That is double declutching the only time you will do it without thinking is if you have a sticky gearbox or you just cant get it into gear.

Double de clutching involves stopping in neutral and letting the clutch up with the engine at idle to slow the gears down.
The main reason for using them on tractors and trucks is the number of gears that you would a have to mesh typical truck has 16-20 gears and a tractor has 40+ forward and the same in reverse.
Double clutching is simply a method used, to be able to move from one gear to another by matching the speed of the input shaft with the gear set, being selected inside the transmission.

At the end of the 1970s, a general economical crisis caused the government to sell Alfa Romeo to Fiat, which still owns it.
Since the 1960s, Alfa Romeo cars have a particular "fault": second gear (manual) is very hard to enter, so it needs the driver to pass just for a fraction of second through the neutral gear (both in acceleration or in deceleration).
This manoeuvre, called the "doppia" or "double Débraillée" (double declutch), distinguishes real drivers from "Sunday" ones.
