By extension the word for carrying or drawing a beer came to mean the serving of the beer, and in some senses the act of drinking or a drink of beer itself regardless of serving method.
By the early 20th century draught beer was starting to be served from pressurised containers, and artificial carbonation was introduced in Britain in 1936 with Watney’s experimental pasteurised beer Red Barrel.
The method of serving beer under pressure then spread to the rest of the world, and by the early 1970s draught beer was almost exclusively beer served under pressure.

We strongly recommend that you "pop" some CO2 onto the beer after you transfer, and before hooking up the "air-lock." This is to insure that the lid will seat properly and all gas must escape through the air lock rather than around the lid.
The beer is pushed out of the secondary with a little CO2 pressure while bleeding off the the pressure slightly (using the relief valve or "in" post) on the receiving canister.
This is accomplished by omitting the priming sugar after the beer has been transfered into the keg, and then chilling the beer down as cold as you can possibly get it (without freezing it, of course!).
