Durthang fortress was high up in the mountains, near Isenmouthe at the great spur of Ephel Dúath forming the south-western wall of Udûn in Mordor.
The fortress was build after the War of the Last Alliance S.A.3429-3441 like the Tower of Cirith Ungol and the Teeth-Towers to watch and guard the passes and borders of Mordor against evil.
Tarondor ruled in Gondor T.A.1636-1798, the watch on the borders of Mordor was ceased because of the Dark Plague and the fortresses that guarded the passes became unmanned and when the Ringwraiths took possession of Mordor, Durthang became a stronghold of Orcs.

In the books, Frodo and Sam, in order to get to Mount Doom, must travel either north and then east, which would take them close to Durthang, or east and then north, as they do.
I couldn't find any artists' impressions of it, so I just threw up a lump with a spike on the side and put a few stones on it.

Durthang sounds very reasonable for me. But I also agree that Gandalf probably didn't have any specific plans.

No bridge houses more than seven trolls, and no troll has a bridge to himself or herself.
The simple-beam bridge, which isn't the one Huor calls home, houses fewer trolls than the arch bridge (which isn't where Jithidin lives) but more trolls than the one in Ocean Hill (which isn't Durthang's home).

As for the "bad guys" getting the best real estate, Sauron purposefully chose Mordor for his stronghold and it is implied that he used his powers to "tweak" the place, through volcanism and such.
The West knew it was strong, that's why they built Durthang and Cirith Ungol to keep tabs on the place.
It was the classic "tired of the eternal garrision" thing that led the watch on Mordor to be abandoned.
