A general name for the races of Men from the unknown East of Middle-earth, who were a constant foe of the Free Peoples, from the treachery of Ulfang in the Nirnaeth Arnoediad of the First Age to their frequent attacks against Gondor in the Third Age.
This is the date when the emergence of the Easterlings into Beleriand was first recorded by those west of the Blue Mountains.
The Easterlings must have had a history predating this by some time (indeed, we have a record of Morgoth having secretly treated with them before they crossed the Mountains) but we have no details of this prior existence.

Aggression is rated as 3, since the Easterlings were constantly invading westwards, except for Khand and the 'other nations': these tended to stay at home unless stirred up by the likes of Sauron or Morgoth, in which case they appear as allied contingents to other lists anyway.

The part that talks about the Easterlings being raised from childhood to fight and going through rigorous training made me think of the Spartans - and in my opinion that would be a very good direction to take the Easterlings - provided that did not contradict what we know about them.
A population that consisted of a minority of Easterlings in contrast to slave labor, having the men live in barracks, proving your manhood by taking on one of the strong slaves and killing him, etc. seems like it would be a plausible backstory for the Easterlings.
These Easterlings may well have been racially similar to the later men of Bree, the Dunlendings, or the cursed men of the White Mountains and not the Easterlings of the Third Age.
