The field of "art history" was developed in the West, and originally dealt exclusively with Western art history, with the High Renaissance (and its Greek precedent) as the defining standard.
Study of the history of art is a relatively recent phenomenon; prior to the Renaissance, the modern concept of "art" did not exist, and art was used to refer to workmanship by generally anonymous tradesmen.
In Byzantine and Gothic art of the Middle Ages, the dominance of the church insisted on the expression of biblical and not material truths.

Art develops the aesthetical theories that bloomed at the end of the eighteenth century and during the nineteenth century, thus criticizing the realistic position (held since Plato that regarded imitative position as the highest value) and the shallow, existing link between art and pleasure.
In the visual arts, the term fine arts most often refers to painting and sculpture, arts which have little or no practical function and are valued in terms of the visual pleasure they provide or their success in communicating ideas or feelings.
Art groups typically were formed by established artists, (Andy Warhol, etc), as hired assistants to the artist, operating collectively under the artist's "studio." More recently, art groups have been formed by unknown artists, pooling their limited resources toward the collective goal.

The text is written by several different authors, one for each region, which has both advantages and disadvantages -- it avoids the fragmentation of Lee's approach, at the expense of integrating it all into one consistent framework.
The key disadvantage of The Art of East Asia (compared to Sherman Lee's History of Far Eastern Art) is that it doesn't include India, which contributed some of Asia's most impressive sculptures, and whose religions had tremendous influence on the rest of Asia.

The visual arts are, first of all, concerned with the disposition of formal elements within a space, and the realization of an idea in physical form—whether or not there are literal references.
And Wendal and Michael's comments to the contrary, an education in the arts, and in art history, is absolutely of great benefit in understanding both the art and the process that created it.
