Pokemon Crystal Pokemon of the Day: Eevee (#133) - IGN FAQs
In GSC Eevee can still be found in Celadon City, though she's migrated from the Mansion to the Game Corner (for 6666 coins!)...of course, if your wallet is aching at the mere thought of all that coinage you could always just pick up an Eevee from Bill in Goldenrod City for free.
Eevee, with the possible exception of (blah) Pikachu, is easily the most popular UNevolved Pokemon to take into a "real" battle; with room for six Pokemon in a party and six total members of the Eevee family, Eevee oftentimes finds herself fighting right alongside her more mature counterparts.
I don't particularly care for Toxic on Eevee as she has no way to lock the opponent in during battle, and once they're poisoned they can't be affected by a more useful condition like Paralysis or Freeze.

Eevee and the eeveelutions also bear a resemblance to rabbits, which would make sense because before lab rats, many scientists experimented on rabbits.
