Recently a friend told me that someone in a diner informed him that "over easy" actually means that not only should the yolk be completely liquid but the white should be runny; "over medium" means that the white should be solid and as much of the yolk as possible should be liquid.
crack one or two eggs in so the yolks don't break, set a cover over the pan and keep checking on the eggs til the white is set enough to flip em without breakage..
Over medium is the white is cooked a little longer but the yellow is still "soupy".

ABout cooking over medium...when I was working over the gas range at the deli, I'd cook them up until the whites were set and no longer clear, then flip, turn the heat off and leave them in the pan for a few seconds(usually while I buttered toast) and then plated.
Over easy was flipped while the whites still had some translucency and then plated almost immediately afterwards.

Hullo, I've always been intrigued by the phrase "eggs over easy" and it's only just now that I've looked up what it is. It seems to be a quick flipping over a fried egg to finish cooking the inner white of the egg that is on the upper side while still leaving the yolk runny.
Am I missing something from the "eggs over easy" experience for my gf (who likes her yolks runny) with the hot oil method or is it just something that people like to show off with (the quick flipping of an egg is a bit of a skill akin to pancake flipping)?
BTW while some like the combination of bacon fat and crispy bits with their eggs I'm finding the same combination with fried, sliced new potatoes to be a winning combination right now.
