Einbeck, still partly surrounded by its 15th century walls, is a town for walking, ogling, and soaking up atmosphere--street upon street lined by crazily leaning half-timbered houses.
Of Einbeck's Gothic churches, the most rewarding is St. Alexander's famed for its elaborately carved 13th century choir stalls, the oldest in Germany.

The city of Einbeck, located in northern Germany near the Saxon cities of Hanover and Brunswick, is credited as being the birthplace of bock.
Einbeck established itself as a brewing center in the 13th and 14th centuries with the production of what was probably a very strong, top-fermenting (ale) wheat beer, or what today would be called a weizenbock.
Nowadays the term bock usually indicates a strong, dark, malty lager, and is often consumed as a springtime or winter warmer.

 All About Beer: BrewStyles-Bock
As the 17th century dawned, the Munich brewers "bent all their energy to brewing a beer as good as that of Einbeck." This effort failed until a brewer from Einbeck was drawn to Munich in 1612, and lent his skills to the cause.
Although the Munich copy of the Einbeck beer bore little resemblance to the original, the resulting beer was still named after the city that inspired it.
Not long after, brewing ceased in Einbeck as a result of the Thirty Years' War (1618-1648) and the name of the Munich-produced beer no doubt began to drift from "Ainpoeckish" to simply "Poeck" and ultimately to the "Bock" we know today.
