In music extended chords are tertian chords (built from thirds) or triads with notes extended, or added, beyond the seventh, including all the thirds in between the seventh and the extended note.
Thus ninth, eleventh, thirteenth, and all farther chords are extended chords.
In practice however, extended chords do not typically use all the chord members; the fifth is often omitted, as are notes between the seventh and the highest note (i.e., the ninth is omitted in an eleventh chord, the ninth and eleventh are omitted in a thirteenth chord).

Chords are derived from numbering the scale degrees of the corresponding root.
The notes of all chords (except suspended chords, 6th chords and some altered chords) are derived from choosing a tonic, and building the rest of the notes from the corresponding scale by skipping every other note of the scale.
If a chord does not hold to the pattern, say the alleged eleventh is missing the 9, containing 1 3 5 7 11, then it is said to be a "seven add eleven".

A full eleventh chord would have the ninth too, but on guitar it's kind of tricky to get a voicing that includes all six of the notes in an eleventh chord (and of course it's impossible to play a full thirteenth chord with all seven notes).
As is, it's technically not F#11 because of not have a 9th, but you VERY rarely hear guitarists play 5 or 6 different notes in the same chord because of the physical limitations and not being able to spread the notes far enough apart (in different octaves) to avoid disonance.
If you saw a piece of music that said F#11, that chord would work, and other members of the band would be playing the G# either as a passing tone in the melody or in a chord.

Sometimes the note given in the bass is not one of the chord notes, but an added note.
Technically this latter chord is an added fourth chord, but the added fourth is not specified since it is implied by specifying the bass note.
