The empire was governed by a non-democratic parliamentary-style central administration called Kurultai in which the Mongol chiefs met with the Great Khan to discuss domestic and foreign policies.
The four descendant empires were the Mongol-founded Yuan Dynasty in China, the Chagatai Khanate, the Golden Horde that controlled Central Asia and Russia, and the Ilkhans who ruled Persia from 1256 to 1353.
A number of principles by which the empire was ruled continue to be emulated in modern times, and form the basis of several principles of modern democratic states.

The "land of the Seres" became known in the Europe as the "Empire of Cathay," based on the name "Khitan", who were a dominant tribe in Northern China at the time of Marco Polo's expeditions in the Middle Ages.
In English and in several other European languages, the name "Cathay" became widely used for all of China largely as a result of translations of the adventures of Marco Polo, which used this word for northern China.
The division of North China and South China under the Jinn Dynasty and Song Dynasty weakened the dogma that China should be unified, and it was common for a time to call the politically disparate North and South by different names.

We know there's a China-like empire known as Cathay in the east, as well as something approximating the Mongolian steppes, the island nation of Nippon, and even the Kingdoms of Ind. These are all clearly shown in the poster map that came with White Dwarf 300.
In the 5th ed chaos army book, one of the blips on the timeline of Chaos is the rise of a very prominent Tzeentch cult in Cathay with a name that I can't remember.
The hobgoblins are the mongols (wolf riders rather than horse riders though), but the ogres still have a bit of that flavour.
