In cooking, espagnole sauce is one of the mother sauces that are the basis of sauce-making in classic French cooking.
The basic method of making espagnole is to prepare a very dark brown roux, to which are added several gallons of veal stock or water, along with 20 or 30 pounds of browned bones, pieces of beef, many pounds of vegetables, and various seasonings.
Espagnole has a strong, even somewhat unpleasant taste and is not itself used directly on food.

And so L'auberge espagnole's total lack of affect makes it waft in and out of your eyes and ears, as you know that nothing of consequence (to Klapisch, anyway) is going to happen.

L'Auberge Espagnole, which either means The Spanish Hotel or Euro Pudding (depending on who you listen to), is way closer to being a Real World movie than The Real Cancun was.
One of writer-director Cidric Klapisch's (When the Cat's Away) underlying themes in Espagnole is the effect of the homogenization of Europe, a point made very clear in a scene where one of Xavier's teachers insists on delivering his lectures in Catalan, instead of traditional Spanish.
The overall effect is a bit rambling and unfocused, but one could almost be distracted by the beauty of Barcelona and pretty much every character in the film (I've pledged my undying love for Amélie's Tautou a number of times, and she's probably the fourth most attractive actress here).
