Eurostar Italia is a network of Italian inter-city trains, operated by Trenitalia (a major Italian railway company) on the routes connecting the main Italian cities and towns.
Several types of high-speed trains belonging to two major families carry out the service.

Eurostar is the name that the FS give to their premium express services.
Eurostar has priority on the lines (at least in Italy) so you never have to wait for other trains.
Eurostar Italia is operated by TAV (Treno Alta Velocità www.tav.it), Italy's network of high-speed trains which is owned by Ferrovie Dello Stato (the national railways organization).

If memory serves from my trip a year and a half ago, the Eurostar Italia do use the same tracks as conventional trains, at least through Bologna.
As far as I can tell, the trainsets don't run too much faster then the rest of the system (maybe 150 versus 110?), and are used in a express style versus limiteds and locals which use the older equipment.
The situation in Italy is comparable to the NEC in this country in which the Acela trains run on the same tracks as conventional trains and commuter trains.
