Falernum; it’s a dual darling both of traditional Bajan drinks (and those native to the surrounding tropics) and also of the mythic and lush tiki drinks of the mid century.
Falernum is a subject about which I am not exactly an impartial observer, but about which I have done a great deal of research nevertheless.
Falernum was the name of the lowest growth grapes – at the foot of the hill.

Here it is in a nutshell: Falernum is called for in a number of classic tiki drinks, Falernum has been produced over the years by a number of different outfits with a lot of variation in recipes, and Falernum stopped being available in the United States sometime in the ’90s.
The Falernum that seems most tightly tied to the oldest Falernum recipe is Velvet Falernum, which has a light, crisp flavor.
Some argue that Velvet Falernum is the most true to original Falernum, while others argue that it doesn’t matter, because the richer, syrupier Sazerac Falernum was more likely to be used when developing the recipes for the classic tiki drinks.

As part of my research into Falernum, this was one of the few cocktails that I could find which still required this ingredient.
Many other Falernum based drinks have instead converted over to the more easily available Grenadine.
While both are sweet, and have a slightly distinctive citric tang to them, Falernum also uses Ginger and some other spices to add some interesting undernotes to its flavor.

So it was that after my Falernum article, I came upon Paul Clarke’s experiments into realms Falernian.
A homemade falernum (or any such exploration) is a statement of faith in ones’ self, one’s own ability to take simple items and personally sculpt a thing of complex art.
Let the established brands do what they do in the drinks that call for them, May the new Falernums, bitters, Pimento Dram serve the spirit of invention, for the drinks yet to be envisioned, yet to be tasted.

I’ve also found that when making falernum, if one has a half-decent orgeat (which I do) it can be used in place of almond syrup.
Rick — the eGullet recipe was actually Falernum #1 for me — I found it pretty mild, especially when compared to the commercial versions.
I didn’t go that route, simply because it would mean every time I made a drink with the falernum, I’d have to recall (or dig out of my notes) the ratio I’d come up with, and adjust that to the particular recipe, depending on how much falernum it called for.

I think I snagged a peek there, and there was some mention that a 50/50 mixture of the Fees + JD Taylor came pretty close to the Sazerac Falernum.
The fine thing about this post is that you'll be able to learn from other's "mistakes" as the basic ingredients for homemade Falernum seem to be quite easy.

My sister's boyfriend is BAJAN, and I asked him if he drinks falernum (I haven't met him yet, they live across the country, but look forward to having a few corn 'n oils with him in july.) After I asked him he became quite giddy, and so he of course does drink it.
I have to say an "apple 'n oil" is awesome, too (sub apllejack for rum).
He also says they drik falernum with red wine, not sure what it is called, said he would ask his mother, who would know quite a bit better than he.
