Feijoada - Wikipedia, the free encyclopedia (via CobWeb/3.1 planetlab2.cs.unc.edu)   (Site not responding. Last check: 2007-10-11)
Feijoada is a stew of beans with various beef and pork products, which is a typical leading dish of Brazilian and Portuguese cuisine, also popular in Angola and other former Portuguese colonies.
The traditional history of Brazilian feijoada is that it was a "luxury" dish of African slaves on Brazilian farms, as it was prepared with relatively cheap ingredients (beans, rice, collard greens, farofa) and leftovers from salted pork and meat production.
Portuguese feijoada is usually served with rice and a rich assortment of sausages, such as chouriço de carne, morcela (a blood sausage), farinheira, and others.

Invented by slaves, who started mixing their masters' pork leftovers to the fl beans that were used to feed the animals, it got a touch of Portuguese and Indian cuisines and today is served all over from the hole-in-the-wall little joints to the most sophisticated restaurants.
These "feijoadas" are popular in the regions where they come from, but are often strange sounding to those people who come from other regions of Brazil because they aren't truly feijoadas.
To call them "feijoada" could be considered a national sacrilege to many people, but to others it's just a name.

Feijoada completa is a buffet meal centered around a stew of fl beans, meat, and sausage.
The best parts of a feijoada to me are the side dishes: lots of fluffy steamed rice and farofa, a soft but firm stuffing-like dish made with manioc meal, or piroas (a chewy but crispy cracker bread that can have olives, raisins, coconut, or sliced vegetables in it).
The actual technique for feijoada would be to cook the beans until they are tender, then remove half and mash them with a fat (traditionally lard or butter, but vegans can use margarine), chopped onions, and minced garlic.
