When Felix is tortured by Sanchez, an underwater shot of the bloody water and the stump where Felix's leg used to be is still missing.
You DO see Felix's leg stump underwater after the initial shark attack - it is brief and it took a couple of rewinds to see that it was indeed the stump of his just bitten off leg.
I've reviewed the French R2 which appears to be the same disc as the UK R2 (got the French version just in case it might be uncut), and the leg stump is still missing and the fiery death appears to be short (though I don't know how long it should be).

I couldn't quite tell if they showed the extended version of the Felix Lieter shark scene or not as the sun was shining on the screen and the way it was edited looked different to the "other" version ITV1 showed of Licence to Kill the last time.
It was edited oddly, and i'm sure there was a shot of Felix's stump in the water for a second, but i'm not entirely sure.
The fullest version I ever saw was a Netherlands' cut of the film: it had the scene with Felix's underwater stomp; it showed Milton Krest's head blowing up (the DVD version has a shot of Sanhez instead), the death of Dario and most of all: a new, extended version of Sanhez's fiery death!
