  NAMS 2003: Program
The sorption and transport of organic molecules in PET are important considerations in flavor scalping, carryover, contamination, and therefore, container shelf life.
Literature data on transport properties of large flavor and aroma compounds in PET are limited due to their extremely low diffusion coefficients in PET [2,3].
This presentation describes results from an experimental exploration of sorption and transport properties of gases and organic vapors (i.e., model flavor compounds) in thin (0.9 micrometers) PET films at 35°C. Our objective is to study the effect of penetrant size, shape, and thermodynamic properties on sorption and transport characteristics in PET.

 Arizona: The Wild Frontier
On the high desert of Arizona, under rocky clefts and hillsides swept with juniper and sage, near canyons concealing rattlesnakes and scorpions, a new wild west tradition was born.
When the Cowgirl of the Apocalypse first told me of Scalping Man, I vowed I’d make it down to Arizona to take part in whatever nuttiness they had planned for this year (which, sadly, I missed.) Meeting Gary only further solidified my belief that they were up to something special out there in the desert.
With its own unique Wild West flavor and a panoply of nonconformists, mavericks and creative people, there is a fire spreading across the Arizona desert- one that threatens to Burn for years to come.

Flavor and Odor Scalping Problems and Analysis
In a perfect world, food and beverage products could be packaged in inexpensive plastic packaging, placed on the shelf and expected to retain their flavor character and quality for months or years of storage.
These processes include oxidation based flavor changes due to through-wall migration of oxygen, acceleration of oxidation processes as a result of exposure to UV light and storage temperature induced effects; just to name a few.
One additional vehicle for negative impact on flavor quality is the loss of critical aroma or flavor components through ‘scalping’ interaction with packaging components.

Beverage World Magazine Online - ASK THE EXPERT: R&D
When beverage companies formulate beverages, they greatly rely on flavor additives, which are mostly in the form of aromatics.
Since water and oxygen are an unfriendly environment for flavors, they begin to degrade almost immediately.
Another benefit is that Encapsulated Aroma Release technology mitigates the effects of flavor scalping from packaging components as well as migration of off aromas from plastic packaging.

The aromas can be controlled to be released at an appropriate stage in the development of the brand building strategy such as on the shelf, or can be used just to release aroma when opening or during cooking.
CompelAroma™ flavors can also be used to gradually release into the package contents and enhance desirable flavors as well as protect contents from processing induced dilution and flavor loss that may occur over extended time on the shelf.

Other carboys smell of plasticizers, mold-release compounds, and unpolymerized organic substances that dissolve into wine or beer to give a disagreeable plastic flavor.
Other plastics used to make carboys and fittings absorb so much flavor (flavor scalping) that they alter the character of wines or beers.
Cleaning carboys and fittings made from these other plastics in order to avoid flavor cross contamination is, at best, extremely time consuming.

But the succinct writing on large subjects like Bordeaux or phylloxera joins trenchant commentaries on new topics such as ``flavor scalping'' (the absorption of aromas and flavors from bottle closures and packing boxes) and ``philosophy of wine'' (with discussions of what Hume and Kant had to say about wine and melancholy).
