When I studied chemistry forty plus years ago, they were using a fairly benign bleaching agent to bleach white flour.
Aspartame also so damages the mitochondria, that people are then damaged by the free radicals spun up by the damaged mitochondria!
I will now avoid ALL white flour products from this point forward.
