Historic Abbeys, Priories, Monastries and Convents in the Languedoc-Roussillon: Fontfroide Abbey in the Languedoc
The Cistercian Abbey of Fontfroide was founded in 1145, and became one of the most important and richest Cistercian abbeys in the Midi.
It was the murder of a monk from Fontfroide, the papal legate Pierre de Castelnau, at dawn, on the 15th of January 1208, that provided Pope Innocent III with his pretext for the Cathar Crusade.
One of Fontfroide's abbots, Jacques Fournier, became Bishop of Pamiers in 1317 and a keen inquisitor (responsible for the arrest of the village of Montaillou).

n the IXth century at Fontfroide or, to be more exact, in Saint-Julien de Septime, one of the oldest and closest farmhouses of the abbey, monks grew grapevines, where such variety as grenache noir or blanc had already been planted.
They produced sweet wines, which could support a voyage, since the wines of Fontfroide were taken all the way to Avignon to be served at the Papal table.
n the XVIIIth century, the last Cistercian community of Fontfroide produced wines for ceremonies as well as quality red wines, which were exchanged for the ceremonies in the abbey of Hautecombe, situated on the border of lake Bourget.

 Fontfroide Abbey
Fontfroide Abbey in Languedoc in South West France was founded in 1093 as a Benedictine Abbey, and joined the Cistercians in 1145.
An ex-Abbot of Fontfroide became Pope in 1334 - Benedict XII aka Jacques Fournier (1280 - 1334 - 1342 (62)) took over at a time when the monastic orders were falling apart and amongst other things he had a reform of the Cistercian Order enacted.
The abbey suffered commendatory abbots from 1476, though in the later 1500s a formal system was instituted for ensuring that the abbot did not plunder all the income, so that there was enough left to "support the living standards" of the by then 7 monks.
