For many food retailers, the use of the Internet for transactions with suppliers and distributors promises greater flexibility and lower transaction costs than the Electronic Data Interchange (EDI) system, which, due to its high initial investment costs, was used primarily by larger buyers and suppliers.
Food retailers have come under increasing scrutiny as the share of U.S. sales by the largest 4, 8, and 20 firms continues to rise.
Despite rising market shares of the Nation’s largest food retailers between 1992 and 1998, there were only moderate increases in the average combined shares of the four largest firms in cities, indicating no substantial lessening of competition (for more details, see Consolidation in Food Retailing).

Anyone processing food, which is defined as cooking, baking, heating, drying, mixing, grinding, churning, separating, extracting, cutting, freezing or otherwise manufacturing a food or changing the physical characteristics of a food, and the packaging, canning or otherwise enclosing of such food in a container, but does not mean the sorting, cleaning or water-rinsing of food.
Foods that would be considered acidified include low acid foods to which an acid or acid food is added (pumpkin butter, salsa, mustard, pickled eggs, pickles and other pickled vegetables).
The food preparation activities in a domestic kitchen must be limited to the kitchen, although occasionally, kitchens have a dining area, entry or pantry that are connected to the kitchen and can be reasonably used as an extension of the kitchen area.

Operators of food retail food stores and food service establishments are encouraged to review their current procedures and controls in light of the potential for tampering or other malicious, criminal, or terrorist actions and make appropriate improvements.
Under Federal law, retail food store and food service establishment operators are required to verify the employment eligibility of all new hires, in accordance with the requirements of the Immigration and Nationality Act, by completing the INS Employment Eligibility VerificationForm (INS Form I-9).
If a retail food store or food service establishment operator suspects that any of his/her products that are regulated by the FDA have been subject to tampering, "counterfeiting," or other malicious, criminal, or terrorist action, FDA recommends that he/she notify the FDA 24-hour emergency number at 301-443-1240 or call their local FDA District Office.

Since foods prepared in these establishments are the closest link to ingestion by the consumer, monitoring, and control of foodborne hazards is most critical at the foodservice and food retail end of the food production.
Transmission in foods: Illness due to Bacillus cereus is most often attributed to foods that are improperly stored (cooled, hot-held) to permit the conversion of spores to vegetative cells.
Foods that are improperly cooled (food in the temperature danger zone for greater than 4hrs.) and then not reheated properly create an ideal condition for the growth of Clostridium perfringens.
