Fragrance in Roses   (Site not responding. Last check: 2007-11-07)
Fragrances are exuded from glands on the lower petal surfaces (and in some cases, leaf surfaces, as with R. eglanteria) and the bristly glands of the moss roses.
Since fragrance in flowers is associated with the attraction of pollinating insects, the genetic triggers for releasing fragrance are associated with the time of day and conditions that these normal pollinators are active.
The actual fragrance of roses is produced by oil-based compounds of alcohols and sugars, produced and combined in the chloroplasts, near the surface of the petals.

Perfume - Wikipedia, the free encyclopedia
The amount and type of solvent mix with the fragrance oil dictates whether a perfume is considered a perfume extract, Eau de parfum, Eau de toilette, or Eau de Cologne.
Included in the perfume are fixatives, which bind the various fragrances together, such as balsams, ambergris, and secretions from the scent glands of the civet cat and musk deer (undiluted, these have unpleasant smells but in alcoholic solution they act as preserving agents).
The fragrance oils are then blended with alcohol and water, aged in tanks for a minimum of 14 days and filtered through processing equipment to remove any sediment and particles before the solution can be filled into the perfume bottles.
