Galium is a large genus of annual and perennial herbaceous plants in the family Rubiaceae, with about 400 species occurring in the temperate zones of both the Northern and Southern Hemispheres.
The species are variously known as bedstraw (most species), goosegrass (G.
Bedstraws are used as food plants by the larvae of some Lepidoptera species - see list of Lepidoptera which feed on Galium.

The Highlanders also made special use of Yellow Bedstraw to curdle milk and colour their cheese, and it has been used in Gloucestershire for the same purpose, either aloneor with the juice of the stinging-nettle.
The name of this genus, Galium, from the Greek word gala, milk, is supposed to have been given from this property of the plants which is shared more or less by most of the group.
Several other species of this genus have roots capable of yielding red or yellow dye but none of them have been practical applied, their produce being too small to admit of their successful cultivation as dyed plants.

The chemical composition of the essential oil obtained from aerial parts of Galium verum L. (Rubiaceae) from Iran was examined by a combination of GC and GC/MS.
Air-dried aerial parts of Galium verum (80 g) which were collected from Bomehen in Tehran province at full flowering stage on May 2003, were subjected to hydro-distillation for 3 h using a Clevenger-type apparatus to produce oil in 1.3% (w/w) yield.
Twenty-three components were identified in the essential oil of Galium verum representing to more than 93% of the oil, the major components of which were found to be ß-caryophyllane (26%), caryophyllene oxide (16.2%), and Germacrene D (11.2%).

The two stipules of adjacent leaves are usually united, and in the Galieae, as well shown in the British species, are enlarged and leaf-like, forming with the two leaves an apparent whorl; by fusion or branching of the stipules the number of leaves in the whorl varies from four to eight or more.
The flowers are rarely solitary, terminal or axillary, as in Gardenia; generally they are arranged in cymes or panicles or crowded into heads, and are often showy; in British members of the family they are very small, but may be conspicuous from their numbers, as in ladys bedstraw (Galium verum).
When dry it forms a capsule with septicidal or loculicidal dehiscence, or is a schizocarp separating when dry into two one-seeded mericarps which, as in the British cleavers (Galium Aparine), sometimes bear hooked appendages which aid their dispersal.
