Gallo Pinto is a Costa Rican and Nicaraguan dish that consists primarily of beans that are slowly cooked until the bean juice is almost consumed, but rice is poured in so it gets the color of the beans.
Gallo Pinto is also known in some Southern Areas of Costa Rica as Burra, though still recognized the name is rarely used as it is mostly refered to as Gallo Pinto.
For breakfast, the traditional national dish of Costa Rica is known as gallo pinto and consists of rice, beans (usually fl though sometimes red are used), cilantro and onion mixed together and sometimes fried a little.

Gallo Pinto is a Costa Rican and Nicaraguan dish that consists primarily of beans that are slowly cooked until the juice is almost consumed, but rice is poured in so it gets the color of the beans.
The name "Gallo Pinto" means spotted rooster, because it looks like speckles when the rice and beans are mixed together to make the dish.
There are other variations of this dish, one of them is known as Moros y Cristianos (Moors and Christians) in Spain, but regarding the true nature of Gallo Pinto, it is believed that it came to be known through the African American inmigrants that live in both countries' Caribbean coasts.

Gallo Pinto is a typical breakfast (and very, very yummy IMO), it consists of eggs, fl beans and rice, usually tortillas and sometimes cheese and sour cream.
A variation for lunch is the casado (also yummy!) which is more fl beans and rice, tortillas, a meat such as beef or chicken, usually a small salad and plantains and sometimes a fl bean paste.
Gallo Pinto is beans, rice, onion, bell peppers, cilantro, and salsa lizano.

They also have side dishes of refried beans or fl beans many times, which are great for energy and protein.
