Gastronomy is the study of the relation between culture and food.
Nevertheless this is a small part of the field of study of this discipline: not always it is possible to be affirmed that a cook is a gourmet.
From the etimological point of view the word "gastronomy" has not a valid meaning at all since it derives from Greek "gaster" or "gastros" that means stomach and "gnomos", knowledge or law.

It is often thought erroneously that the term gastronomy refers exclusively to the art of cooking (see Culinary Arts), but this is only a small part of this discipline: it cannot always be said that a cook is also a gourmet.
The first formal study of gastronomy is probably The Physiology of Taste by Jean Anthelme Brillat-Savarin (early 19th century).

Molecular gastronomy - a branch of food science that focuses on cooking and food preparation (rather than on the chemical makeup of food, as traditional food science tends to do) - has the answers.
The term molecular gastronomy was coined in the 1980s by a French scientist, Hervé This, and Nicholas Kurti, who was a professor of physics at Oxford University in England.
Both men were interested in food science, but they felt that empirical knowledge and tradition were as important in cooking as rational understanding.

Nonetheless, this is still a good read--there are some fascinating ancedotes as to life in the "new" United States which Savarin reports on after an adventure in the newly independent colonies.
