I usually make this Gingerbread Man as a rice bag to use as a warming bag, but it can also be stuffed and used as a doll.
Cut out 2 gingerbread men from the felt and 2 from the lining fabric for each gingerbread man. I cut 1/2" strips of some kind of fusible webbing or Steam a Seam and apply them around the edges of the felt enough so the lining can be pressed in place.
Stitch all around the man until you reach the left top of the head and leave an opening to pour in the rice (a funnel works well).
