As is the case with other whiskies, the malted barley is then mixed with warm water to produce a mash which is then fermented with the addition of yeast and distilled.
The majority of single malts spend a minimum of five years in casks, although most are aged at least eight years, and some for much longer.

Glenfiddich is far and away the best selling malt whisky in the world - in a sales league of its own, with a 35% export market share.
One of the reasons for this is that the family decided to promote it as a single malt in 1963, a good fifteen years before any other distillery wised up to the potential market for single malt.
Another is that Glenfiddich is a light-bodied, fragrant whisky, supremely 'accessible' and therefore having a very broad appeal.

 Glenfiddich - About Whisky - Malt - www.scotchwhisky.com
Glenfiddich is not only the world's best-selling malt whisky, it is the whisky which introduced the world to the pleasures of single malt.
Above all, Glenfiddich's success is attributable to the fact that it is the most 'accessible' malt and easy to drink at any time of the day.
This sense of family tradition and continuity runs through all the company's operations: Glenfiddich still has its own cooperage and coppersmiths, grows some of its own barley and has its own maltings; it retains open mash tuns and traditional Douglas fir washbacks, and it fires its stills directly, with coal.

Glenfiddich is a little bit sharp, so I would suggest adding a five or six drops of water to each ounce and a half you pour of it.

Of all the single malts I've tried, my fave is actually the 25 year Macallan...and it has NOTHING to do with the cool wooden coffin-case...honest! It's the best of all worlds...not too expensive, not too smoky, or sharp, but definitely a complex and pleasant taste.
Actually the best I ever had was at a single malt tasting sponsored by Glenmorangie.
I never associated Glenmorangie with top shelf single malt but that night made a believer out of me. Still I'd take Macallan 18 or 25 (you're absolutely right about the 25 year, btw) over anything I know of dollar for dollar.
