There are many ways to prune and train vines but this is what works for me in a vineyard with over 20 different varieties of grapes.
This keeps tying the vine to a minimun and it is sometimes called a "no tie" system (although there is still a lot of tieing involved).
This delaware vine in row 70 had only one trunk so we prune and trained a long cane from the base of the vine up and over the top wire to become a future trunk and top cordon.

yes it is okay to transplant the grape vine at this time as long as we are not in a period of sub zero temperatures.
Try to get as much rootball as possible, this won't be easy as the grape roots will tend to be deep, almost taproot like, just try and get as much root as you can and you should fine.
I don't think it's too cold to transplant but...Do I have to dig up the plant or can we use clippings or "snips" as my sister calls them.

This mural is on my dining room wall and surrounded with lattice work.
The leaves were done with an old sponge I cut up and the grapes were done with a wine cork.
The whole thing only took about 2 hours.
