It evolved to some degree, sometimes adding a reverse spike, but eventually guisarme became a generic term for any weapon with a hook, such that you had voulge-guisarmes, and glaive-guisarmes.
They followed a different evolution, such that any weapon that was similar to a glaive or fauchard, but with extra bits thrown in, was often called a bill.

Guisarme - Wikipedia, the free encyclopedia
A guisarme (sometimes gisarme or bisarme) was a pole weapon used in Europe primarily between 1000-1400.
While early designs were simply a hook on the end of a long pole, later designs implemented a small reverse spike on the back of the blade.
Eventually weapon makers incorporated the usefulness of the hook in a variety of different polearms and guisarme became a catch-all for any weapon that included a hook on the blade.

How... do you pronounce... GUISARME??? oh, and Cthulu? - Wizards Community
The closest English phonemes to that would probably be "gee" (as in the GEA in Gear) - zharrm (a close approximation would be the "sarm" in "disarm", with a Z sound instead of an S, and a slightly softer M at the end to reflect the silent E.)
As far as I know, Guisarme is pronounced (in English) just like the English "gizarme." One wonders why they use the French term for it.
Probably cos "guisarme" is a word and "gizarme" isn't.
