Well you do see a Headcrab take over a person, at the beginning of HL2, when you first see the "Shells" being launched with headcrabs in them, on jumps on a guy on the other side of a fence, and he just falls to the ground after trying to fight back...
Maybe the Headcrab injects a nerve agent which slowly causes the body to stop functioning under your control leaving it lifeless, then the headcrab uses some mechanism to enter the brain stem through the mouth controlling what it can...
Supposedly the headcrab has an appendage which enters the victim's brain through the mouth, so how they manage to speak in Half-Life 2 is a mystery.

Headcrab zombie ragdolls come in two parts: The headcrab and the zombie.
So, if you want to pose one, you've gotta spawn the two ragolls, stand up the zombie, position the headcrab on his head, pose the headcrab legs so it looks like he's attached, and take your picture.
It'll die after a couple hits and the headcrab will remain attached to the zombie's head (which is why you have to use the crowbar -- if you shoot it to death, the headcrab will generally fall off).

This is a reskin of AI's headcrab, which I made with the mod Afraid of Monsters in mind, but I guess could be used in any context.
It's a pretty dark skin and there are two versions, one with a skull's eyes and nose pressing against the surface of the headcrab's skin and one without.
I had headcrabs with a skull head like that in the beginning, but I thouight it looked to "the hunger-ish".

Wounded, but still game, the Poison Zombie detaches a headcrab, introducing four more legs into the race that doesn’t appear to be much of a race at all at this point.
It appears to be a divide and conquer strategy, as the headcrab scuttles over to the Vort and postures in a threatening fashion.
Still a couple loose headcrabs running around, though, so the Team Zombie is still in what I am stubbornly continuing to call a race.
