Hechsher - Wikipedia, the free encyclopedia
Hechsher (הכשר Hebrew: "kosher approval", plural: hechsherim) is the formal granting of certification, usually by an authorized rabbi, that a product is certified as kosher (meaning "fit" [for consumption].) A hechsher is usually conveyed to the public by a special marking on products (generally foods) certifying that the item is certified as kosher.
In halakha ("Jewish law"), the kashrut ("dietary laws") specify food items that may be eaten and others that are prohibited as derived from the commandments of the Torah.
The best known hechsher symbol in the world is the "OU" symbol of the Orthodox Union based in New York City in the United States.

It should be noted that many Rabbis have started Vaads, and their standard may not be yours (a good example recently seen on the shelfs, kosher for Pesah candy with corn syrup).
Another result of the large cost of hechshers is that there are products out there that are inspected but do not carry a hechsher.
Hechshers without an accompanying mark are usually pareve (except where obvious like ice cream).

The most common places you will find a hechsher are 1) on the front of the package below the logo, 2) on one of the bottom front corners, 3) near the list of ingredients or 4) on the top (lid) of the package.
The OU symbol is the most well-known and widely-used hechsher in the world.
The Star-K hechsher is also very prevalent, and the Star-K’s web site is also a great repository of kashrut information, including up-to-date lists of kosher alcohol, beverages, medicines, and other items.

When an organization or individual puts a hechsher on a product they attest to the fact that the contents and manufacturing meet their standards of kashrut.
Looking for the hechsher and for the statement of whether a product is dairy, meat or pareve, or for questionable ingredients listed on the label, are necessary procedures.
A hechsher is therefore necessary on fruit from Israel.

For some agencies, the hechsher means merely that the vegetables have no additives that pose kosher concerns although the product itself my still require checking.
For others, such as the OU, the hechsher means that the product has been established to be acceptable, and should require no checking on the part of the consumer.

The hechshers are trademarked so that the Rabbinic boards who supervise the food can control which product labels they may be printed upon.
The three largest hechshers in the United States are O-U (a U in a circle), O-K (a K in a circle) and Kaf-K (a K inside a Hebrew letter Kaf, which looks a bit like a backward C).
The O-U hechsher tends to leave off the indicator for Parve unless it is an item which one would not expect to be parve (like a parve coffee creamer).

Store-bought foods can be identified as kosher by the presence of a hechsher (plural hechsherim), a graphical symbol that indicates that the food has been certified as kosher by a rabbinical authority.
For various reasons, such as changes in manufacturing processes, products known to be kosher on one day might not be kosher tomorrow; a change in lubricating oil to one containing tallow, for instance.
Many vegetarian restaurants and producers of vegetarian foods do acquire a hechsher, certifying that a Rabbinical organization has approved of them as Kosher.

The basis for the ruling that the Rabanut may remove a hechsher ONLY where issues of kashrut were raised vis' a vis' the FOOD, was a case in Jerusalem, where the Rabanut threatened to remove its hechsher for two reasons; places where belly dancers occasionaly preformed, places that held New-Years eve parties.
The court ruled that the Rabanut may remove their hechsher ONLY when there were hallachic violations in the preparation of the food.
The hechsher (he calls it the Piece of paper) does not tell people that the people running the place are Tzadikim (rightuous), rather that the FOOD was properly prepared.

In fact, this is why every kosher certifying authority has a trademarked symbol for its hechsher and why these trademarks are vigorously defended.
The OU hechsher is respected in part because the OU vigorously prosecutes anyone who uses their symbol without authorization.
For better and for worse (in my opinion for the better, but in this case for the worse), there are no laws regarding the establishment of religion in the United States, so any "rabbi" who wants to can give a "kosher" certification.

I shake and tremble to hear that one Rov has taken it upon himself to grant a Hechsher to meat processors whose owners are not Jewish and who are also purveyors of non-Kosher meat, a situation in which it is far too easy to substitute non-Kosher meat for Kosher.
Of critical importance in their efforts was the prohibition against giving a Hechsher to butcher shops and meat processors that are engaged in the production and processing of both Kosher and non-Kosher products, a ruling that has been repeatedly reinforced and reconfirmed by ensuring generations of G’dolim.

It is very clear from the Shulchan Oruch (Yoreh De'ah Siman 103 and 107) that something that is not edible cannot be considered unkosher, and may be used, even if it has non-Kosher ingredients.
This is especially true since it isn't consumed orally in any way (although some may argue that dishtowels washed with laundry detergent and not rinsed properly might present a problem, this is really no problem since, as above, the detergent is inedible).
Regarding dish detergent, there are certain kinds that might be considered edible, according to some opinions, and it is therefore a good idea to buy with a Hechsher.

REVIEW ANSWERS - Chulin, Daf 128
And to explain the basis of their Machlokes, he cites a Beraisa, where Rebbi Akiva rules that Cheilev of a Shechutah of the villagers (who are Nochrim) does not require Hechsher, because it already became Muchshar with the Shechitah.
The Tana mentions villagers here - because either due to the fact that they are farmers and more meat is available to them, or because they are poor (and it is the wealthy who tend to eat Cheilev) - the Cheilev of their animals requires Machshavah to give it the status of food.
The difference between human food and animal food regarding Hechsher Tum'ah is that - whereas the former requires Hechsher for Kabalas Tum'ah, the latter does not.

Something should be done because it makes kashrut the object of ridicule when people (especially non-observant jews) see certifications on things that obviously don't require it.
