Heel and Toe is a driving technique that allows you to smoothly brake and down shift at the same time.
Because the shift is done smoothly there is no sudden change to the balance of the car and so the risk of spinning, locking up your wheels or otherwise doing something that loses you time and speed is reduced.
There are two parts to the heel and toe technique, the actions you need to perform and a process called rev matching (also explained in double declutching).

In normal shifting, we rely on the synchros to control the speed of the intermediate shaft as it engages with the gears connecting it to the transmission output.
The shift has to be done while braking, and the engine needs to be sped up so that it will rev-match the new gear so that the tires won't be jerked past their limit.

I used to have to brake until I was slow enough for the turn, get off the brakes, and then do the shift before turning in for the apex.
The term 'heel-toe' is misleading because most drivers don't really use their heel, but rather use the inside and outside part of the foot.

The downside to that would be the lack of total brake control; with the standard ball of the foot on the brake pedal you have total control and don't risk slipping/sliding off the most important pedal...
Heel and toe is a very common racing technique.
The classic definition of "Heel and toe" (and I did look this up to verify my understanding in Watts' Secrets of Solo Racing) is the method of downshifting in which the left food depresses the clutch and the right foot operates both the brake and the throttle.

Heel toe shifting is used when down shifting while braking in a way to not lock the tranny or jerk the car around.

I don't actually 'heel and toe', per se, I would call it 'ball and edge', using the left half of the ball of my foot (under my big toe) on the brake, and pivot the right edge of my foot on the accelerator.
If you elected to heel and toe yourself, you clutch-in...a quick blip on the throttle with the other half of your foot...bam...and the lower gear selects nicely...you've just out-braked that car and shut the door.
Heel and toe serves a primary purpose...to accomplish more things in a smaller amount of time.

heel toe i dont know about, nor do i really care other than i believe it has to do with being on the brakes and clutching with the same foot.
The entire heal toe downshift should be done fairly quickly, the gas should only be a blip, but a blip large enough to have matched the revs for the gear you want to go in, and the clutch should move the swiftest of all.
Heel toeing in my rocco was kind of akward at first because of the footwell, it's hard to get the heel in.

I found that heel/toe was easier to learn under semi-hard braking, since your "heel" (actually anywhere along the right side of your foot) and "toe" (the upper left portion of the ball of your foot) will be in a more natural position.
When the clutch pedal is pushed and the shift lever moves through neutral, the intermediate shaft drops in speed and will quickly match the speed of the higher gear.

The "heel" part of the maneuver is to bring the engine RPM up to the speed of the input shaft of the trans.
You shift into 3rd gear (with the help of your synchros) and the input shaft of the trans gears up and spins at 6k RPM due to road speed.
Heel/Toe shifting simply involves using the right foot on both the gas and the brake at the same time, allowing full coverage of all the pedals.

Now I know that many auto makers do not make it easy for you to heel and toe, so if your stock pedal placement is not right for this method of heel and toeing than you will have to check back next issue.
Once the shift lever is out of fifth, rotate your right ankle so that the right side of your right foot presses the gas pedal enough to rev up the engine to the correct RPM (do this with a hard stab of the throttle).
When you are really good you will be able to heel and toe down shift through all of the gears in your transmission including first all perfectly smooth.

You are incorectly assuming that finess is needed for throttle blipping with the heel,but it is not.The actual delicate throttle modulation while track driving is still done with the ball and toes(mostly done between rounds of heel and toe).Most heel and toing is done under braking and downshifting,usually in a fairly straight line,no finess needed.
I've always thought that if your pedals are spaced right, it would be better to use your heel for the brake and your toes for the gas.
When I first started heel and toeing in an MR-2 that's exactly how I did it and got pretty good at braking with my heel.
