In current hex sign mythology, the 5-pointed star is purported to be a symbol of protection from fire and lightning or a protection for livestock, a meaning closely related to the use of these stars by ancient Norsemen.
One of the more popular stars in hex signs (and the one we use in the EquiHex Star Series hex signs), the eight-pointed star has ancient roots as a symbol of the planet Venus and for the Venus goddess, which is probably why this star is sometimes associated with fertility.
