Dragons and swords aside, currently, Shimane is number ten in Japan in terms of the number of breweries, despite its rather comparatively sparse population.
There is usually a higher amino acid content, giving Shimane sake plenty of "umami." More concretely, much sake from this region has a nutty touch with a subdued sweetness in the background, full flavor, and a brilliant acidity that both spreads the flavors and provides some backbone.

The theme for the 2003 show was to express through art how you have changed and how you have been affected by your experience of living in Japan and Shimane and share this with other foreigners and Japanese people.
This was the first year that Changing Prespectives had multiple venues and it was a great success.
We were well received all over Shimane and look forward to many more years of wonderful art of Shimane in years to come.

On November 25, 2003, NTN Casting Corp. (hereafter called NTN Casting) of Hirata, Shimane Prefecture, a 100 percent-owned subsidiary of NTN Corporation (hereafter called NTN), achieved ISO 14001 certification, signifying compliance with international standards of environmental protection.
NTN Casting acquired ISO 14001 status just seven months after starting the application process, the shortest time period of any company in the casting industry.
During the ISO 14001 acquisition process, NTN Casting was involved in joint research with the Shimane Institute for Industrial Technology, Tatenui Construction Business Association and the Shimane Industrial Promotion Foundation on the recycling of casting sand, which in the past has gone into landfills.
