This surplus is the honey that is harvested.
To rob honey from the bees you have to smoke the hive by first smocking the entrance and then as you are taking the top cover off you must smoke under the cover.
This is done by shaving of the wax capping to expose the honey on both sides of the frame, and then you place the frame (usually 4 to 20 frames at the time) into the extractor, which is a centrifuge that spins and forces the honey out of the wax cells on the frame.
